Look-Alikes
Species to rule out before picking. Each is tagged with its own edibility.
Other Tuber spp.
EdibleTuber aestivum (summer truffle), T. canaliculatum (North American gray) are edible but less prized. Not dangerous.
Rhizopogon, Scleroderma (Earthballs)
ToxicScleroderma is toxic. Earthballs have thick black warty rind and black flesh throughout; truffles have white marbling (veins).
Identification Tips
- ✓Truffles are underground — dogs or pigs locate them by scent
- ✓Slice to reveal white vein marbling — proves it's a true truffle
- ✓Store in rice or with eggs in fridge to absorb aroma
- ✓Black Scleroderma (earthball) is poisonous — if flesh is uniformly black it's not a truffle
